What ingredients do you need to make Microwave Avocado Cilantro Lime Rice?

  • 2 cups white Minute Rice
  • 2 cups water
  • 2 medium ripe avocados 
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro
  • 1/4 teaspoon (heaping) ground cumin
  • 1/2 teaspoon minced garlic
  • Salt and freshly ground black pepper, to taste

How do you make Microwave Avocado Cilantro Lime Rice?

Make the rice according to the package.

While the rice is cooking, mash the avocados in a mixing bowl.

Chop the cilantro. You can do this by hand, but I like to chop it in a small food processor.

Add in the lime juice, cumin and garlic to the food processor. If you aren’t using a food processor, then just these ingredients as well as the cilantro into the smashed avocados and mix thoroughly.

Add salt and pepper to taste.

Fluff the rice when it’s ready.

Spoon the avocado mixture into the rice and mix it thoroughly.

Serve immediately.

Keep in a sealed container in the fridge for up to 2-3 days.

What substitutions can you use with Microwave Avocado Cilantro Lime Rice?

You can also use other Minute rice such as brown rice, jasmine rice, or basmati rice. You can use any rice that you can make in the microwave.

You can also switch out parsley for the cilantro if you’re like me and don’t care for cilantro.
