It’s highly addictive. When I give this to someone, they can never eat just one or two pieces at a time. It’s rich and decadent. It’s a bit like leche quemada.or penuche fudge, but it’s not a sweetness overload. The cookie butter mitigates the sweetness, so it’s not overpowering.

Ingredients to make Cookie Butter Fudge

- 1 bag white chocolate chips
- 1 can dulce de leche
- 1 cup Lotus Biscoff spread
- 4 Lotus Biscoff biscuits, crushed
How to make Microwave Cookie Butter

Line an 8 x 8 pan with foil.
Place the four Biscoff cookies in a ziplock bag and crush them.
Add the white chocolate chips to a microwave-safe bowl. Microwave in 30-second increments, stirring after each time, until the chips are completely smooth and melted.
In a second microwave-safe bowl add the dulce de leche and biscoff spread. Microwave for 30 secs, then stir; repeat a second time.
Combine the mixtures, but work fast because it sets very quickly.
Pour the mixture into the foiled pan. Use your fingers or a spatula to quickly smooth it out. Sprinkle the crushed cookies over teh top.
Let it sit in the fridge for 2-3 hours before cutting into squares.
Keep in an airtight container for up to a week.
