Microwave Smothered Burrito Casserole

This Smothered Burrito Casserole is a simple Mexican style casserole that takes just a few minutes in the microwave!

We love our TexMex food, and enchiladas and casseroles are some of the easiest meals to put together quick in the microwave.

What do you need to make a Smothered Burrito Casserole?

You will need just a few things.

  • One thing that you can vary is the meat. I like to use ground beef, but you can also use shredded chicken, or even refried beans.
  • 6-8 “fajita size” flour tortillas
  • 15 oz jar of queso
  • 8 oz shredded cheese
  • 1/2 cup chopped onions, if desired.

How do you make Smothered Burrito Casserole?

First, decide if you want to use shredded chicken, ground beef, or refried beans. If using meat, I recommend adding taco seasoning. This recipe is my simple method for making beef taco meat in the microwave.

Once the meat is ready, steam the tortillas in the microwave by wrapping them in a damp paper towel and heating for about 30 to 60 seconds.

Spray a 7 x 11 microwave-safe baking dish with non-stick oil spray. You could also use an 8 x 8 baking dish as well. I prefer either of these sizes because they can easily rotate in a microwave.

Next, began making burritos with the meat, shredded cheese, and onions (if desired). We have an onion allergy in the family, so I don’t cook with them.

Add a couple tablespoons of meat (or beans) topped with shredded cheese in a tortilla. Then roll it and place it in the microwave-safe dish. Continue doing this, until the baking dish is full of burritos.

Once the baking dish is full, take the jar of queso and pour it over all the burritos. Use a spoon or spatula to make sure all are covered.

Sprinkle some cheese over the top of the queso.

Wrap the baking dish in plastic wrap or wax paper and cut a few vents in the top.

Heat on HIGH in the microwave for 3-4 minutes, until the burritos are heated through. If the bottom of the baking dish feels hot to me, I remove it from the microwave.

Remove the plastic wrap or wax paper.

Add an additional sprinkling of shredded cheese and heat for an additional 30-60 seconds until the cheese is melted.

Serve immediately.

You can add toppings once the casserole is ready. I like to add cilantro, chopped avocado,, or dollops of sour cream to the top before serving.
