Ingredients to make Cowboy Hash in the Microwave

  • Frozen Meatballs
  • Frozen Potatoes O’Brien (hashbrowns with peppers and onions)
  • Chili Powder
  • Egg

How do you make a Single Serving of Cowboy Hash for the microwave?

In a microwave-safe bowl or mug, cook the meatballs according to the package. Then, break them apart into small pieces. I like to just smash them with a fork.

Add the Potatoes O’Brien and mix it up with the meatballs. Cook the mixture in the microwave for about 90 to 120 seconds.

Beat 1 egg.

Add the chili powder and egg to the mixture and mix it up until it’s well combined.

Cover the mug or bowl with a microwave-safe plate or saucer.

Cook for 1 minute in the microwave, until the egg is set. If the egg doesn’t look done, cook for an additional 15 seconds at a time, checking each time.

You can, but I don’t think it tastes nearly as good. If you do make it ahead, just reheat it in the microwave.
