Ingredients to make Cheese Enchiladas in the Microwave

  • Corn tortillas
  • Shredded cheese – Colby jack, Cheddar, Monterrey jack, etc.
  • 15 oz can chili with no beans
  • 10 oz can red enchilada sauce

How do you make Easy Cheesy Enchiladas in minutes in the microwave?

Wrap the tortillas in damp paper towels and cook on HIGH in the microwave for 30-60 seconds.

Spray a microwave-safe baking dish with non-stick oil spray.

Add a small handful of cheese to a tortilla. Roll it up and put it seam-side down in the pan.

Continue doing this until you’ve filled the whole pan. I use a 9 x 11 glass pan and can fit about 10 enchiladas in it.

Combine the chili and enchilada sauce until it’s well mixed.

Pour it over the top of the enchiladas and spread it around if needed.

Heat the enchilada uncovered for 4 minutes on HIGH.

Sprinkle cheese over the top of the enchiladas and cook on HIGH for an additional minute.

Let sit for a couple minutes before serving.
