This Microwave Huevos Rancheros is super easy to make, and it takes just four ingredients.

How to make Huevos Rancheros

I like to use canned pinto beans for this, but if you have pinto beans you’ve already cooked, those work, too. With canned pinto beans, I drain and rinse them in a colander.
I do not drain the Rotel tomatoes and green chiles.
In a microwave safe bowl or mug combine the pinto beans, Rotel tomatoes and green chiles and ground cumin. Mix them up really well.
Heat the mixture for 1 1/2 to 2 minutes in the microwave on HIGH.
Remove the mixture from the microwave and make a hole in the center of the mixture for the egg.
Crack the egg into the center, keeping the yolk whole.
Add salt and pepper over the egg as desired.
Cover the bowl or mug with a saucer.
Heat in the microwave on HIGH for 60 seconds. Check to make sure the egg white is just barely cooked. The yolk will still be runny. If the egg white is still clear, heat in 20-second increments until it’s just barely cooked.

Can you make this ahead of time?
You can make up the first mixture before adding the egg and pop it in the fridge the night before. Then, when you’re ready to eat, heat up the mixture for 2 to 2 1/2 minutes. You want it hot before adding the egg. Then, continue following the original recipe by making the hole, adding the egg, and cooking.

Microwave Huevos Rancheros
Ingredients
- 1 egg
- 5 oz Rotel tomatoes and green chiles (1/2 a can)
- 1/3 cup drained pinto beans
- 1/8 teaspoon cumin
Instructions
Drain the pinto beans.
Combine the Rotel tomatoes and green chilies, pinto beans, and cumin in a microwave-safe bowl or mug.
Heat for 1 1/2 to 2 minutes on HIGH.
Make a well in the center of the mixture and crack an egg right in the center. Don't break the yolk.
Place a saucer over the top and cook for 60 seconds in the microwave until the egg white is just cooked.
