Healthy High Protein Banana Baked Oatmeal in the Microwave

Are you making a change to eat healthier this year? This High Protein Banana Baked Oatmeal is perfect for breakfast, and you can make it right in the microwave in a couple minutes. You probably have all the ingredients necessary right in your kitchen. This post contains affiliate links.

Ingredients for Banana Baked Oatmeal

All the ingredients needed to make Banana Baked Oatmeal
  • quick cook oats or oat flakes
  • 1 ripe banana
  • 1 egg
  • 1/2 cup milk
  • a dash of salt

How do you make Banana Baked Oatmeal?

You can make this recipe in a microwave-safe bowl or a 16 oz microwave-safe mug.

Mash the banana with a fork.

All the ingredients ready to mix up in a white bowl with a fork.

Combine the milk, oats, banana, egg, and salt and mix until it’s all completely mixed up.

Cook on HIGH in the microwave for 1 1/2 minutes. Check to see if it’s done. If it’s still wet in the center, cook for 1 more minute.

Allow it to sit for an additional minute.

Substitutions

You can switch out the banana for applesauce. I think cinnamon applesauce is the best, but your favorite will work great. If using regular applesauce, I recommend adding a dash of cinnamon to the mix as well.

Half and half will work great in place of cream. You could also use evaporated milk, too.

I have a child allergic to eggs, so I’ve used Bob’s Red Mill Egg Replacer in this recipe, and it works great, too. I’ve used the egg replacer instead of eggs in many recipes, and it always does the job.

Variations to Banana Baked Oatmeal

You can make all kinds of variations with this recipe. Here’s a couple you might enjoy:

  • add 1 tablespoon of peanut butter with the banana for Peanut Butter Banana Baked Oatmeal
  • add 1 tablespoon of unsweetened cocoa + 1 tablespoon of brown sugar for Chocolate Banan Baked Oatmeal

Toppings for your Banana Baked Oatmeal

Want some mix ins? Try a few of these:

  • drizzle of half and half or heavy cream
  • spoonful of pure maple syrup
  • spoonful honey
  • chopped walnuts or pecans
  • dollop of peanut butter
  • spoonful of apple butter
  • spoonful of peach butter
  • fresh berries – blueberries, strawberries, blackberries, etc.
  • fresh sliced bananas
  • a dollop of cinnamon applesauce

Overnight Baked Oatmeal

You can make this the night before and then it’s ready to cook in the morning for breakfast. Here’s what you do:

  • Prepare the oatmeal just as above, but don’t cook it.
  • Instead, cover it and put it in the fridge overnight.
  • When you’re ready, pull it out of the fridge and cook it uncovered as usual.
