How to make French Toast Casserole in a Mug

I have made french toast casserole for the whole family for years, but sometimes you just want it fast, which is when it’s perfect to make French toast Casserole in a Mug. For the basic version, you probably have everything you need in the kitchen right now!

This is a great breakfast for busy weekdays, like school mornings. It takes no time at all, and it’s always a kid favorite and a great way to get some fruit in them. Plus, scroll down to see how to make it ahead and put it in the fridge the night before before cooking it in the morning for breakfast.

  • white sugar
  • 1 egg
  • cinnamon
  • salt
  • milk
  • bread, cubed
  • optional: vanilla extract

How do you make French Toast in a Mug?

You can use any type of bread you’d like for this. You could even use crusty french bread, or a croissant, or a slice of angel food cake. I find the more stale the bread is, the better this recipe works.

When testing this one out, 3 slices of regular ol’ white sandwich bread is the perfect amount for this recipe.

Use either a microwave-safe cereal bowl or a 16-oz microwave-safe mug.

Cut the bread into 1-inch sized cubes, then set aside.

In the bowl (or mug) mix up the sugar, milk, egg, cinnamon, and salt.

Transfer the bread cubes into the milk mixture and mix them together so the bread is all moistened.

If you have time, I find it’s good to let the bread sit in the mixture for a few minutes to soak it up, especially if the bread is particularly stale. (In fact, you can use plain croutons to make this recipe, which would probably need to soak about 10-15 minutes due to how hard they are.)

If you don’t have time, this recipe still works out well, just make sure all the bread is wet before cooking

Cook in the microwave on HIGH for 1 1/2 minutes. Check it to make sure it’s firm to the touch and the liquid has all been absorbed into the bread. If not, then heat for an additional 30 seconds to 1 minute.

Now, it’s ready to eat!

Toppings for your French Toast in a Mug

You can top this just like you would making regular french toast.

  • powdered sugar
  • syrup and butter
  • fruit preserves
  • pie filling
  • chocolate syrup and whipped cream
  • whipped cream and berries

Variations on French Toast Casserole in a Mug

There are lots of ways to make this your own. When adding the bread cubes, mix in your favorites at the same time. Here’s a few ideas:

  • 1 tablespoon chocolate chips
  • 2 tablespoons sliced strawberries
  • 2 tablespoons dried fruit
  • 2 tablespoons blueberries or raspberries
  • 1 tablespoon peanut butter chips
  • 1 tablespoon of softened cream cheese in small dollops

How to make this ahead of time

You can make this recipe the night before and have it ready to cook in the morning.

Make it just like the recipe, including adding the bread cubes. But then cover it and put it in the fridge overnight until you’re ready to cook. Then, cook as indicated in the recipe.
