In a microwave-safe bowl or mug melt the butter for 20-30 seconds.

Add the croutons and the Parmesan cheese to the butter and mix it up. Set aside.

In another microwave-safe bowl or mug add the frozen Italian veggie blend. Heat for 90 to 120 seconds.

  • 1 tablespoon butter
  • 1/4 cup croutons
  • 1 tablespoon Parmesan cheese
  • 3/4 cup diced Italian tomatoes, drained
  • 1 cup frozen Italian vegetable blend
  • optional: 1/3 cup white beans


  1. Melt butter in a microwave-safe dish for 20-30 seconds.
