Minute Ready Rice is so dang versatile. You can take a little cup of it, heat in the microwave, and turn that stuff into anything. Anything! You can make all kinds of meals from breakfast with some peanut butter and honey to a stir fry rice bowl to a burrito bowl. But my personal favorite is this Single Serving Cheddar Broccoli Rice Casserole.
Cheese + Broccoli = LOVE. I have a thing for cheese. It’s probably more like a love affair. I’m not sure I could live without cheese. And, I just love broccoli. It’s one of my favorite veggies steamed.
This Cheddar Broccoli Rice Casserole tastes just heavenly with melted fresh cheddar and smashed broccoli mixed with the rice. It’s a little piece of comfort food you can have for lunch or any time.
If you live in a dorm with just a microwave, you can make this into a delicious comfort food meal in no time flat – less than 5 minutes! You can even make this meal at work or school. If there’s a microwave around you can use, you can make this.
Cheddar Broccoli Rice Casserole on the go
You can even take this to school and make it in the cafeteria. I pack a bowl of the Minute Ready to Serve, a ziplock bag with about 2 tablespoons of shredded cheddar, and a ziplock bag of frozen broccoli with about 4-5 florets. Don’t pack fresh broccoli as it will take longer to steam. With the frozen broccoli, it will defrost before lunch time and be perfect for smashing after you heat it up.
