Pasta Fagioli Soup in the Microwave

An easy dinner for 3-4 people with this microwave Pasta Fagioli Soup. Dinner’s ready in about 5 minutes!

This soup makes a great appetizer before a meal or as a quick and easy meal itself. I love serving it with a crusty bread and simple salad.

Ingredients to make Microwave Pasta Fagioli Soup

The pasta, carrots, seasoning, and chicken broth in a white microwave-safe container for the pasta fagioli
  • 8.5 oz package of precooked 60-second pasta (Barilla, etc.)
  • 1 can diced or sliced carrots, drained
  • 1 can white beans, drained
  • 1/2 cup spaghetti sauce
  • 2 cups chicken broth
  • 1 teaspoon Italian seasoning
  • 3 tablespoons bacon bits

How to make Pasta Fagioli in the microwave

Heat the 60-second pasta according to instructions.

If you don’t want to use the pre-cooked pasta, you can make your own. I’d recommend elbow, rotini, penne, or farfalle, even the mini versions will work. Use 1/2 cup of dry pasta and cook it on the stove or in the microwave.

In a microwave-safe large bowl combine the pasta, carrots, chicken broth, Italian seasoning and mix it up.

Cook for 2 minutes.

Drain the beans and mash half of them.

Add the whole beans, mashed beans, spaghetti sauce, and bacon bits to the soup and mix it up.

Heat for 2 minutes.

Dish it up and sprinkle each bowl with freshly shredded Parmesan cheese.
