What do you need to make this Microwave Chicken Fettucine Alfredo Pasta Bake?
All you need a box of fettuccine, a can of chicken, a jar of Alfredo sauce, a bag of shredded mozzarella cheese, and some minced garlic. You probably already have oil, salt, and water at home.
How do you make a Chicken Fettuccine Alfredo Pasta Bake in the Microwave?
I like to use this 4-qt microwave-safe dish for making these types of pasta bakes. It’s big enough to make the pasta right in the microwave.
Add the olive oil, salt, and water to the dish. Then, break the fettuccine in half and place in the dish. If you can find pot-sized fettuccine noodles, it’s usually already broken in half.
Microwave the fettuccine noodles in 5-minute increments uncovered. Stir after every 5 minutes. You’ll probably need to cook it for about 25 minutes total time.
When I make fettuccine in the microwave, it usually absorbs all the water. But, if you still have some water in the dish, make sure to drain it.
While the noodles are finishing up, pour the alfredo sauce into a medium-sized bowl.
Drain the chicken and rinse it. I don’t like the smell of canned chicken, but rinsing it usually removes that smell.
Add the chicken to the sauce as well as the minced garlic and mix it up until it’s well combined.
Pour the sauce over the top of the noodles and mix it up until the noodles are well covered. If you want to stop here, you can. You’ll just have some delicious Chicken Fettucine Alfredo.
But, it’s really good with melted cheese over the top.
Sprinkle with 8 oz of whole milk mozzarella cheese. I prefer whole milk mozzarella, but if you just have the the regular mozzarella, it works fine in a pinch, too.
Heat the casserole for 3 to 5 minutes in microwave until the cheese is melted and starting to get bubbly.
Serve immediately!
Can you make this pasta bake ahead of time?
Yes. You can make it up a day ahead. Just don’t melt the cheese ahead of time. Also the microwave time will probably take an additional 5-7 minutes to heat up and melt the cheese.
You could also cover it and freeze it after sprinkling the cheese. I would recommend defrosting in the fridge before heating it.
How do you store the leftovers of this Microwave Chicken Fettuccine Alfredo Pasta Bake?
If you microwave-safe dish has a lid, then just cover and store in the fridge for 3-4 days. This makes great leftovers! Otherwise, transfer your leftovers to a covered container and store for 3-4 days in the fridge.
