  • baking powder
  • an egg
  • cottage cheese
  • shredded cheese – Cheddar, Monterey Jack, Colby, etc.
  • bacon bits
  • vegetable oil

In a microwave-safe bowl or mug, combine all the ingredients and mix until well combined.

Heat on HIGH for 1 minute to 1 minute 20 seconds, until the puff is set and not runny in the center.

Substitutions for this Breakfast Casserole

Switch out the bacon bits for crumbled sausage.

You can use just about any shredded cheese or even goat cheese. Personally, I think it tastes best with a sharper cheese like Cheddar or Colby.

Leave out the bacon and cheddar and use feta and chopped chives for a different flavor.

Can you make this ahead of time?

I would recommend against this. I find it doesn’t taste as amazing as when it’s made fresh.
