How to make Microwave Copycat Chili’s Skillet Queso

Do you love chili con queso? This Copycat Chili’s Skillet Queso is probably one of my favorites. It’s a huge family favorite every time I make it. I’ve made it in a skillet, in an instant pot, and now it’s even easier in the microwave!

This recipe dip is perfect for movie night, snack time, or anytime. I frequently make it for game night.

It’s also a very quick recipe to put together when you have unexpected guests. You can have it ready to snack on in less than 10 minutes with a bag of chips or tortillas. Or, it’s perfect as a sauce to go over tamales.

What ingredients do you need to make Chili’s Skillet Queso?

Ingredients to make Microwave Copycat Chili's Skillet Queso
  • 15 oz cans chili with no beans
  • 16 oz Velveeta block cheese
  • 4 teaspoons chili powder
  • 1/2 teaspoon of salt
  • 1 cup milk (or half and half)
  • 2 teaspoons paprika
  • 1/2 teaspoon ground cayenne pepper
  • 1 tablespoons lime juice
  • 1/2 teaspoon ground cumin

How do you make Copycat Chili’s Skillet Queso in the Microwave?

Cut the Velveeta into 1 inch cubes.

Add all the ingredients to microwave-safe bowl and give it a stir to mix up everything together.

Heat in the microwave on HIGH for 3 minutes. Then, give it a good stir.

If there are still chunks of Velveeta, cook for an additional 2-3 minutes on HIGH. Stir it up until it’s completely melted and smooth.

Serve with tortilla chips or tortillas.

What substitutions can you use with this recipe?

I have switched out the milk for 1/2 milk and 1/2 cream and I have used 1 cup of half and half instead of milk.

I have also used lemon juice when I was out of lime juice.

I never substituted real cheese for Velveeta, so I have no idea how that would turn out.

Everything else is pretty necessary in this recipe to get that delicious flavor.
