If you love our microwave pralines, you’ll enjoy these No Bake Biscoff Cookie Butter Cookies. They’re very similar to pralines, but instead of nuts, they’re full of oats as well as my personal favorite thing — cookie butter!
Everybody loves these cookies. Even though these are no bake cookies, they are great for gift giving, for party treats or even bringing to a cookie exchange party.

Ingredients to make No Bake Biscoff Cookies
- white sugar
- brown sugar
- milk
- Biscoff Cookie Butter spread
- vanilla extract
- quick cooking oats
How do you make No Bake Biscoff Cookie Butter Cookies?
Combine white sugar and brown sugar as well as milk in a large microwave safe bowl until they are all incorporated.
Heat in the microwave on HIGH for about 5-6 minutes. You should see the sugars bubbling and boiling.
Place parchment paper or wax paper on cookie sheets while it’s cooking.
Remove from the microwave and immediately add the Biscoff spread and vanilla extract. Whisk together until both are completely incorporated.
Add the oats and stir until the oats are completely mixed in.
NOTE: It might look too runny, but it hardens up as it cools. But, if you still feel it’s way too runny, add an additional 1/4 cup oats.
Take a cookie scoop and drop by the spoonful onto the wax paper.
Allow the cookies to cool and harden before enjoying.

What kind of milk do you use for this recipe?
You can use any kind of milk. I like to use whole milk, but 2%, skim, and even evaporated are fine.
Can you cook this on the stove instead?
Yes you can. Instead of placing the bowl in the microwave, put the sugars and milk in a sauce pan and cook without stirring on medium high until it reaches a full rolling boil.
Then, follow the instructions in the rest of the recipe.
Can I substitute something else for the Biscoff spread?
Yes you can. You can use peanut butter or other nut butters. You can also use Nutella. Or, you can use another brand of cookie butter. You can also skip that step and just add the vanilla and oats and have more of a “no nut” version of pralines.
Do you need to use quick cooking oats?
Yes, due to the nature of the recipe cooking quickly after heating, you want quick cooking oats and not something like steel cut or old fashioned oats.
