Salsa Chicken in the Microwave

You can make plain chicken breast in the microwave, but you can also make Salsa Chicken in the Microwave to infuse that salsa flavor right into your chicken breast while it’s cooking. This post contains affiliate links.

This meal is so versatile. It’s perfect for make ahead meals.

You can eat it as is over a bed of rice. Or, you can shred the chicken and put it in burritos, nachos, tostadas, or even enchiladas.

What do you need to make Salsa Chicken in the Microwave?

You’ll need 1-2 chicken breasts, preferably thin cut. You’ll also need your favorite salsa, cheddar cheese, and 1 tablespoon of taco seasoning, which is about 1/2 a packet of taco seasoning.

For added flavor, I love to add shredded cheddar cheese and sour cream, but these are totally optional.

How do you make Salsa Chicken in the Microwave?

First, sprinkle the chicken with the taco seasoning and coat both sides of each piece.

Then, transfer the chicken to an 8 x 8 baking dish.

Pour the salsa over the top of each chicken breast.

If you have a glass cover, I recommend using that over wax paper or plastic wrap, but both of these are also fine if you don’t have a glass lid.

Microwave on HIGH for 5-8 minutes. If you don’t have a turn table in the microwave, make sure to turn the dish once halfway through cooking time.

This is based on a 1500 watt microwave, so if yours is less or more, the time will differ somewhat.

I would recommend starting with 5 minutes if your chicken is on the thinner side. Then, check your chicken to make sure it’s reached 165 F degrees internally and is thoroughly cooked. The juices should run clear when pricked with a fork (but that is often hard to see when you have red salsa on the chicken).

If the internal temperature has not reached 165 F degrees, then pop it back in the microwave for an additional 2-3 minutes and check again.

If you want to add cheese, sprinkle it on top of each chicken and pop it back in the microwave. Cook for 30-45 seconds until the cheese is melted.

Then, plate your chicken and sliced it on a bed of rice or shred it for your favorite tacos or burritos.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 packet taco seasoning mix
  • 1 cup chunky salsa
  • 1/2 cup cheddar cheese
  • Optional: sour cream

Instructions

Sprinkle each chicken with the taco seasoning mix, making sure to coat both sides of each piece.

Place chicken in an 8 x 8 or 7 x 11 inch microwave safe dish and pour salsa over the tops of each chicken breast.

Cover and microwave on HIGH for 5-8 minutes. If your microwave doesn't have a turn table, turn the dish halfway through the cooking time.

Make sure chicken is thoroughly cooked by checking internal temperature, which should be above 165 F degrees.

Juices should run clear when pricked with a fork.

Sprinkle chicken with shredded cheese and return to microwave and cook for about 30-45 seconds, until cheese is melted.

Slice, if desired, and serve over rice or with additional side dishes.
