What do you bake a microwave cake in?
You can make this cake using the usual 8 x 8 square baking dish. It’s always my go to for cakes and casseroles in the microwave. However, for this cake, I used a 9-inch round silicone cake pan.
Can you make a microwave cake from a box mix?
Yes! I do it all the time. I find it easiest to use the 9 oz boxes of Jiffy Golden Cake, which you can usually find at Walmart. However, I’ve also used the bigger Duncan Hines, Betty Crocker, and Pillsbury brands – with these, I end up using half the batter for one cake pan.
What do you need to make a Pineapple Upside Down Cake in the Microwave?
You’ll need a few things:
- 8-9 inch silicone or ceramic cake pan
- a Jiffy Golden Cake mix
- butter
- brown sugar
- a small jar of maraschino cherries
- an egg
- 20 oz can of pineapple slices (you want the pineapple ring slices)
- a small box of instant vanilla pudding mix
How do you make a Pineapple Upside Down Cake in the microwave?
Between silicone and ceramic pans for the microwave, I love my ceramic porcelain baking pans from Sweese. I get them on Amazon and have muffin pans, loaf pans, and cake pans. They are so nice and heavy and do amazing in the microwave and dishwasher. I use mine at least two to three times a week, and they wash up and look brand new every time.
Slice up the butter and put it in the microwave-safe cake pan.
Microwave the butter in the pan for 30-45 seconds to completely melt it.
Sprinkle the brown sugar evenly over the butter.
Then, arrange the pineapple slices on brown sugar.
Next, place the cherries in center of each pineapple slice, and arrange the rest of the cherries around the pineapple slices. Press the slices and cherries gently into the brown sugar.
Make the cake batter as directed on the box with 1 egg and substituting 1/2 cup of pineapple juice mixture for the 1/2 cup of water.
Pour batter over pineapple and cherries.
Microwave the cake for 6-7 minutes and check that a toothpick inserted in center comes out clean.
Immediately run a sharp knife around the side of pan to loosen the cake.
Place the serving plate upside down onto the pan. Then, turn the plate and pan over together.
Leave the pan over the cake for about 5 minutes so any leftover brown sugar topping can drizzle over cake.
Remove the pan and cool 30 minutes. Pop it in the fridge for a quicker cool down.
Serve warm or cool with fresh whipped cream.
Store covered in refrigerator.

Pineapple Upside Down Cake in the Microwave
Ingredients
- a Jiffy Golden Cake mix

- Pour the pineapple juice into a measuring cup. Set aside.
- Slice up the butter and put it in the microwave-safe cake pan.
- Microwave the butter in the pan for 30-45 seconds to completely melt it.
- Sprinkle the brown sugar evenly over the butter.
- Arrange the pineapple slices on brown sugar.
- Place the cherries in center of each pineapple slice, and arrange the rest of the cherries around the pineapple slices. Press the slices and cherries gently into the brown sugar.
- Make cake batter as directed on box with 1 egg and substituting 1/2 cup of pineapple juice mixture for the 1/2 cup of water.
- Pour batter over pineapple and cherries.
- Microwave the cake for 6-7 minutes and check that a toothpick inserted in center comes out clean.
- Immediately run knife around side of pan to loosen cake. Place serving plate upside down onto pan; turn plate and pan over. Leave pan over cake 5 minutes so brown sugar topping can drizzle over cake.
- Remove pan.
- Cool 30 minutes.
