Made from Scratch Brownies in the Microwave!

I usually am a box mix kinda girl when it comes to cakes or brownies, but these made from scratch brownies in the microwave are super easy and quick to whip together and are made of all kinds of fudge-y deliciousness! If you have basic baking ingredients in the pantry like flour, sugar and unsweetened cocoa, you can totally make these. Let’s do it!

These brownies come out chocolatey and sweet and even the next day they’re still soft and delicious. They’re perfect for a small batch treat when you’re wanting a chocolate dessert.

How do you make Brownies in the Microwave?

Spray an 8 x 8-inch microwave-safe baking casserole or something similar (as long as it’s safe to go in the microwave). You could also line the bottom with parchment paper if you prefer.

Melt the butter in the microwave and set aside to cool slightly.

In a medium-sized bowl combine flour, cocoa, and baking powder and mix together.

Add the butter, sugar, egg, and vanilla to the dry mixture and mix together by hand until everything is wet. The consistency should be fudgy.

Transfer the brownie batter to the baking dish and spread it evenly.

Sprinkle chocolate chips over the top (or nuts), if desired.

Cook in the microwave on HIGH for 2 minutes.

Use a toothpick to check if done. If the center is still gooey, add 30 more seconds.

Then, remove the baking dish and let cool for a few moments before cutting into squares.

Can I use unsalted butter?

Yes, you can use unsalted butter in place of the salted butter, but add 1/4 teaspoon of salt to the recipe when you do.

I would recommend making them a day or less ahead of time. They were still soft and delicious on day 2, so one day ahead is just fine.

Can I add nuts?

Definitely! Sprinkle about 1/4 cup of nuts over the top of the batter such as chopped pecans or walnuts before cooking.

They do just fine in a sealed container on the counter for a day or two. They are very fudgy, so I would not recommend stacking them together for storage unless they are separated by wax paper or parchment paper. Or, they might just become one big brownie.
