Make Microwave Chicken and Stuffing Casserole for a Fast Dinner!

This Microwave Chicken and Stuffing Casserole is one of THE easiest and fastest casseroles to make. It will take you less than 10 minutes from “what’s for dinner?” to having it on the table ready to eat.

  • 1 box Cornbread Stove Top
  • 12 oz can of chicken, drained
  • 1 1/2 cups chicken broth
  • 1/3 cup milk or half and half

How do you make chicken and stuffing casserole?

Seriously, this is the fastest thing to make and you don’t have to remember ahead of time to defrost anything. It will make about 5-6 servings.

Combine the stuffing mix, 1 cup of chicken broth, and the half and half (or milk). Then, mix until well combined. It will appear soupy before cooking.

Spray a microwave-safe 7 x 11 or 8 x 8 casserole dish with non-stick oil spray.

Transfer the mixture to the dish.

Cook for 3 minutes in the microwave on HIGH.

Drain the canned chicken. I also like to rinse it in a colander in water.

Add the canned chicken and the last 1/2 cup of chicken broth to the stuffing mixture.

Mix it all up and pop it back in the microwave.

Cook in the microwave an additional 3 minutes.

Serve with brown chicken or turkey gravy.
