Do you ever crave caramel, but don’t want to go to the trouble of making a big batch of it or make it on the stove? This Small Batch Microwave Caramel Sauce makes just enough to top your ice cream or add to your coffee and it takes about a minute to make it. It’s so easy, you’ll be amazed!

Ingredients for Small Batch Microwave Caramel Sauce
- butter – I tend to use salted butter, but if you are using unsalted, just add 1/4 teaspoon of salt to this recipe.
- brown sugar – You can use light brown or dark brown. For this recipe, I used light brown.
- cream – I used heavy whipping cream. You can try using half/half but your caramel sauce will be very thin.
- vanilla extract – I’ve made my own vanilla for years, but a good quality vanilla extract is all you need.
You can double or triple this recipe and the cooking time will be close to the same.
How to make a Small Batch of Microwave Caramel Sauce
Place the butter in microwave safe dish or bowl and microwave on HIGH for 30-45 seconds, until the butter is completely melted or just almost completely melted.
Combine the brown sugar, cream, and vanilla to the butter and stir until well combined. Microwave on HIGH for 30 seconds.
Stir and microwave on HIGH for 15 more seconds or until completely smooth. Watch carefully because, at this point, it can bubble over.
Let the caramel sauce stand 5 to 10 minutes before serving. It will thicken during this time. It will also thicken as you drizzle it over something cold like ice cream. If you want to speed up the thickening, place the caramel sauce in the fridge for 10-15 minutes.

- Add a spoonful or to your coffee
- Dip apple slices
- Drizzle over popcorn
- On top of brownies
- Dip pretzels
- Drizzled on pumpkin pie
- Drizzled on cheesecake
- Drizzled over banana bread
- Drizzled over 2-ingredient OREO cake
- Spooned over peach cobbler
- Drizzled over a microwave baked apple
- On pancakes or waffles
- Or… just on a spoon!

Notes
If substituting white sugar, it will be much lighter in color, more of a cream color.
If substituting half and half, the sauce will end up much thinner
