Banana Bread in a Mug

Did you bring home a banana or two from the dining hall, and they’ve just been sitting there? Or maybe you grabbed a couple of bananas at the free hotel breakfast this morning?  With a few basic ingredients, you can totally make banana bread in a mug!

If you ever plan on doing a little baking in your microwave, I recommend having a small container of each of these products on hand: 

  • white sugar
  • all purpose flour
  • baking soda 
  • salt
  • cinnamon

My daughter helped me develop this recipe in her dorm room. Late one night she called me because she was dying for banana bread, which is one of her favorite desserts. I gave her a list of ingredients, and she put it all together, popped it in the microwave and loved it.

Luckily, she just so happened to have bananas turning brown.  You can let your bananas sit until they are totally brown to make this recipe. They’ll feel mushy, but that is the PERFECT banana for mug banana bread.   

She had some fairly small bananas.  We figured out, while we were experimenting, if you love banana flavor, you might want to add an extra banana to your mug if you have room and your bananas are small.  Or, if you have a pretty large banana, you’ll need just one.   

How to Make Banana Bread in a Mug

I recommend using a mug larger than 12 oz, just so things don’t bubble over. This recipe is simple to make. 

I like to add the bananas first and then smash them up in the mug.  Next, I just throw all the other ingredients in and mix it all up.  Depending on your microwave, it might take anywhere from 2 to 3 minutes to completely cook through.  

I have an amazing banana bread recipe over on my other blog, and it’s topped with cinnamon and sugar that crystallizes while it’s baking.  I’ve made this banana bread in a mug both with and without that cinnamon and sugar topping.  If you like something like that, mix a tiny pinch of cinnamon with a teaspoon of sugar and sprinkle it over the top of the  mixture before you pop it in the microwave.  This is totally optional.  

If you are a big fan of chocolate and/or Nutella, you can make your banana bread in a mug extraordinary, if you add a spoonful of Nutella on top of this dessert.  It will send your mouth straight to heaven.

Banana Bread in a Mug

Love banana bread? Use up that last banana or two and make it in a mug topped with Nutella!

Ingredients

  • 4 tablespoons flour
  • 2 tablespoons sugar
  • 1 ripe banana, smashed (for added flavor add 1 more ripe banana)
  • 1/4 tsp baking soda
  • 1 tablespoon water
  • pinch of salt
  • dash of cinnamon

Instructions

  1. Smash the banana.
  2. Combine all ingredients in a 12 oz mug.
  3. Microwave for 2-3 minutes.
  4. Top with Nutella, if desired.

Notes

One large banana or two smaller ones really adds to the flavor. But, it tastes delicious with just a regular-size banana, too.

For a sweet sugary topping, mix a tiny pinch of cinnamon with a teaspoon of sugar and sprinkle it over the top of the  mixture before you pop it in the microwave.
