What do you need to make Microwave Lemon Bars?

How do you make these Microwave Lemon Bars?
These go together really quick and easy, but you will need to refrigerate them to chill before cutting them.
Grease an 8 x 8 microwave-safe baking dish or line it with parchment paper.
Combine the flour, sugar, and lemon zest together.
Stir in the melted butter.
Press the mixture into the bottom of the baking dish. I do this with my fingers and then use the back of a measuring cup to press it in nicely.
Microwave on HIGH for 2 1/2 to 3 minutes.
Check to make sure it’s done and firm. If it’s not done, microwave for an additional 30 seconds to 1 minute.
Set the crust aside to cool.
Now it’s time to make the filling.
Combine the sugar, lemon zest, eggs, and lemon juice and beat until smooth.
Add the flour, baking powder and salt and continue beating for a couple more minutes.
Pour the filling over the crust and microwave for 3 minutes.
Check the filling to see if it’s done. The middle may jiggle just a tiny bit. If it’s still soupy and not set, then microwave for an additional minute.
Put the baking dish in the fridge to cool for a few hours or if possible, overnight.
Cut into squares with a hot knife.
You can top these bars a couple of ways:
- Dust with powdered sugar – or
- Make a batch of fresh whipped cream and add a dollop in the center of each square.
Feel free to add additional lemon zest over the powdered sugar and whipped cream.
How do you make fresh whipped cream?
I make small batches of fresh whipped cream all the time. You can easily make it in a cereal bowl with a dash of sugar and 1/2 cup of heavy whipping cream.
Just use an electric mixer or a hand egg beater or even a milk frother. Believe it or not, I use the hand egg beater more than anything to make a quick batch in just a minute.
How do you store leftover Microwave Lemon Bars?
I recommend storing any leftovers in a sealed container in the fridge. I usually keep them for up to 3-4 days.
Can you make these Microwave Lemon Bars ahead of time?
I would encourage making them a day ahead since it’s best to let them cool overnight. However, I would wait to dust the powdered sugar or add the whipped cream until you’re ready to serve them.
