Simple Microwave Lemon Curd

Do you love fruit curds? I love it from lemon curd to raspberry curd. They are wonderful as toppings or between layers of cake or as mousse. Did you know you can make lemon curd in the microwave? This post contains affiliate links.

What do you need to make lemon curd in the microwave?

Usually when you make lemon curd, it’s over a hot stove and you need to separate egg yolks from the egg whites.

This microwave method is much easier. It’s a little runnier than the typical stove-top lemon curd. It tastes very good.

You’ll need eggs, white sugar, lemon juice, and butter to make microwave lemon curd.

Do you need fresh lemon juice?

Yes and no. I prefer to use fresh lemon juice. I’ve found the typical bottled lemon juices not good enough for good lemon curd.

But…there is one bottled pure lemon juice that is good for making lemon curd. It’s Santa Cruz Organic Pure Lemon Juice. I think it works just as good as if you squeezed fresh lemons.

If you want to use fresh squeezed lemon juice, it will take about four large lemons to get the amount needed in this recipe.

How do you make microwave lemon curd?

Put all the ingredients together in a large microwave-safe bowl. Make sure there is plenty of room in the bowl so the mixture to bubble up.

Microwave the mixture in 1-minute increments. Stir it after each time.

It will be done when the lemon curd starts to thicken and coats the back of a spoon. The curd needs to reach a temperature of at least 185°F, and then it’s done.

The cooking process took me about 6 minutes. It can take from 4 to 10 minutes depending on the wattage of your microwave, so look for the temperature, coating, and thickness for doneness.

After it’s done, stir the curd again and check for little bits of egg white. If there are any, then pass it through a fine-mesh strainer to remove them.

What can you put lemon curd on?

Lemon curd is good as a dessert topping or inside things like crepes or cakes. Here’s a few ideas:

Ingredients

  • 1 cup white sugar
  • 2 eggs
  • 3/4 cup + 3 tablespoons lemon juice
  • 8 tablespoons of butter

Instructions

Notes

Add the zest of two lemons to the sugar for a more powerful flavor.
