This would be perfect to finish off a nice little Valentine’s Day dinner with your love. And, I’ve found with a mug cake, I don’t even need frosting or whipped cream. I just drizzle a little whipping cream I keep in the fridge for my coffee, and it’s the perfect topping.
Egg Free Chocolate Mug Cake for Two
What I love about mug cakes is that you can pretty much just dump the ingredients together and stir until it looks like cake batter. Then, it’s straight to the microwave for a scrumptious treat.
I recommend you start with 1 1/2 minutes as a cook time. If it looks like it’s not quite done, just pop it back in the microwave for another 30 seconds to 1 minute.
This recipe is just a plain straightforward no egg chocolate mug cake. But….if you wanna get fancy, here are some tips to make it absolutely AMAZING! Before popping your mugs into the microwave, gently add a spoonful of one of these right on top of the cake batter to make it even better:
- Cookie Butter
- Dulce de Leche
- Peanut Butter
- Marshmallow Creme
- Chocolate Chips
- Crushed Cookies – chocolate chip, OREOs, etc.
- 1/2 C flour
- 1/2 C sugar
- 4 TBS unsweetened Cocoa
- 3 TBS whole milk
- 3 TBS Canola oil
- 1/4 TSP Pure vanilla extract
- Combine all ingredients in a bowl and mix until combined.
- Pour into two mugs.
- Place in microwave and cook for 1 1/2 minutes on high.
- If not done, cook for an additional 30 seconds to 1 minute.
- Let cool for 2 minutes.
- Top it with your favorite toppings such as chocolate chips, chocolate syrup, whipped cream, frosting, or my favorite -- a drizzle of heavy whipping cream.
