If you have a roommate who also loves cake and/or unicorns, you can even share this delicious treat by doubling the recipe and make it for 2 people easily. Just split the batter into two separate mugs. They will totally love you for it.
Plus, this recipe doesn’t have any eggs in it, which is great for those of us with egg allergies or those of us who are out of eggs. There is nothing suckier than finding a recipe you want to make and realizing you are out of half the ingredients.
Now I’ll tell you a secret about this cake. If you need a vegan cake or just don’t have any milk, you can switch the milk out for water and have a dairy free and egg free treat. OR…if you aren’t vegan and want to indulge a little, you can switch that milk out for cream or half and half. It’s really good that way, too!
Let's have cake for dinner made right in the microwave with this Unicorn Mug Cake!
- 2 tbsp flour
- 1 1/2 tbsp sugar
- 1/4 tsp baking powder
- 1/2 tbsp bright and colorful sprinkles
- 1 1/2 tbsp milk
- 1/2 tbsp oil
- 1 tsp pure vanilla extract
- In a small bowl, mix all ingredients until combined.
- Pour ingredients into a 12oz mug.
- Microwave on high 2 minutes.
- Let cool for 1 minute.
- Optional: Top with your favorite frosting and sprinkles.
