Ingredients to make Chicken Fried Rice Casserole in the Microwave
- 2 boneless chicken thighs or breasts
- water
- salt/pepper
- frozen peas and carrots
- Jasmine or Basmati Minute Rice Ready Rice
- Teriyaki Sauce
- minced garlic
- eggs
- milk
How do you make chicken fried rice casserole in the microwave?
This will go together very quickly and will serve two.
First, you’ll need to cook either two boneless chicken breasts or chicken thighs in the microwave. These take just minutes and are super easy. Or, you can use canned chicken or a store bought rotisserie chicken shredded.
If cooking the chicken, set the chicken aside to cool before shredding it.
Next, crack two eggs into a bowl and add the milk. Beat them together.
Cook the eggs for 1 minute. If they’re still runny, stir it up and cook for an additional 30 seconds.
Break up the eggs into small pieces with a fork and then, set aside.
Next open the two Ready Rice containers. Pour a tablespoon of teriyaki sauce over the top of each cup.
Cook each cup for 60 seconds in the microwave. Then, set aside.
Add 1/2 cup of frozen peas and carrots to a microwave-safe bowl and add a couple tablespoons of water. Microwave for 60 seconds to 1 1/2 minutes. Then, set aside.
Now it’s time to shred the chicken. Take it out of the water and shred it.
Put all the ingredients into an 8 x 8 or 7 x 11 inch microwave-safe baking dish – eggs, shredded chicken, peas and carrots, rice.
Add the soy sauce and garlic and stir it all up and spread it smooth.
Microwave it all together for 2 minutes.
Serve immediately.
