How to make Microwave Million Dollar Mexican Spaghetti

This Microwave Million Dollar Mexican Spaghetti is perfect when you need to clean out the fridge from leftovers. Got spaghetti and some leftover taco meat? If you don’t, you can make spaghetti in the microwave and taco meat in the microwave in minutes.

This is the perfect meal! This is often called Taco Spaghetti or Mexican Spaghetti. Either way, it’s delicioso!

Ingredients for Million Dollar Taco Spaghetti

The secret ingredient to this dish is totally the cream cheese.

  • Spaghetti
  • Ground Beef
  • Taco Seasoning
  • Sour Cream
  • Cream Cheese
  • Colby Jack cheese, shredded
  • Rotel tomatoes
  • Spaghetti sauce
  • Cottage or ricotta cheese
  • Dried Parsley
  • Garlic Powder

How do you make Microwave Million Dollar Taco Spaghetti?

This is a perfect recipe to use leftover spaghetti and taco meat.

Spray a microwave-safe 9 x 11 or 8 x 8 baking dish, set aside.

If you haven’t already, make the spaghetti. Set aside.

Make the taco meat, drain, and add taco seasoning.

Add the Rotel and spaghetti sauce to the taco meat.

In a separate bowl combine sour cream, cream cheese, cottage cheese, garlic powder, and parsley. Mix until well combined.

Add half the spaghetti to the bottom of the baking dish.

Spread the cream cheese mixture over the pasta.

Add the second half of the noodles over the cream cheese mixture.

Pour the taco meat mixture over the top.

Cook for 3-4 minutes.

Sprinkle with Colby jack cheese.

Cook on HIGH for 3 minutes, until cheese is melted.

Allow to cool for a few minutes before serving.

If you made this ahead of time and it’s been in the fridge or if you’re using cold leftovers like cold spaghetti and cold taco meat, you’ll need an additional 3-4 minutes to get it hot.

Substitutions & Tips

You can make this casserole ahead of time and refrigerate it overnight. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.

You can assemble the casserole ahead of time and freeze it uncooked for later. When ready to cook, thaw completely on the counter and bake as directed above.

I love cottage cheese, but if you don’t, you can substitute ricotta cheese in place of it.

You can also substitute ground turkey or ground pork for the beef.

I like to use Colby Jack cheese for a topping, but you can use a Mexican cheese blend, Pepper Jack, Monterrey Jack, Colby, or Cheddar.

This recipe uses a can of Rotel diced tomatoes and green chiles. You can use any heat level you prefer – Mild, Regular or even Hot.
