How to Cook Microwave Spoon Bread

I don’t know what it is about these cold winter days, but even after Christmas, I want some good old fashioned comfort food. And, Microwave Spoon Bread is perfect to satisfy that craving.

This is an old Southern dish that takes about 15 minutes to make, and it just tastes like home cooking when you’re tired of frozen dinners and fast food.

What is Spoon Bread?

Spoon bread is an old Southern dish that is a bit of a mystery. It’s a delicious cornbread that needs to be eaten with a spoon, and it’s a bit like a soufflé.

It’s rumored to have been a dish from the Native Americans, but no one can really find evidence for this. The first time it was ever mentioned was in a cookbook back in the 1840s, and it’s become a favorite in the South.

What do you need to make Microwave Spoon Bread?

I swear it’s just so satisfying how this dish comes out of the microwave. You will be so excited to grab a big ol’ spoonful and put it on your plate.

I like to take a shortcut with microwave spoon bread and start with a box of the Jiffy brand cornbread mix. Then, you’ll need an egg, some butter, sour cream, and a can of creamed corn.

How do you make Microwave Spoon Bread?

I like to make it in microwave-safe 7 x 11 or 8 x 8 casserole dish. Make sure to spray the dish with some oil spray.

Just mix up all the ingredients until they are completely combined. Then, let it sit for a few minutes. That time will allow the mixture to get bubbly and rise up from the baking soda.

I find if I do this with Jiffy, whether I’m making spoon bread or just regular cornbread, it always comes out lighter and fluffier than when I don’t wait.

Now it’s time to cook it in the microwave. My method is based on my 1500-watt microwave.

You’ll start out with your microwave at 50% power and cook it for 7 minutes. At this point, it should have risen a lot, but it will be very jiggly.

Increase the microwave power to 100% and cook for an additional 8 minutes. When it comes out, it will be light and fluffy, but there should be no jiggling. If yours is still jiggling, cook in 1 to 2 minute increments, until there is no jiggling.

As it cools, it will fall a bit and get a little firmer than when you first pull it out of the microwave, but that’s perfectly normal.

It’s time to serve it immediately. Enjoy!

What should you serve with Microwave Spoon Bread?

It’s the perfect side dish for something like rotisserie chicken or slices of ham or turkey breast. You might even like it with Microwave Meatloaf.

How do you store spoon bread?

I like to store it in a sealed container in the fridge for up to a week. It goes fast here, so I haven’t had the chance to store it in the freezer.
