What do you need to make Microwave Chocolate Cracker Toffee?
The recipe requires white sugar, butter, salt, saltine crackers, and chocolate chips. If you don’t have saltines, I’ve made this same recipe with Ritz crackers, and it comes out just as yummy.
You’ll also need a large microwave safe bowl as well as a cookie sheet or tray and a spatula.
How do you make Microwave Chocolate Cracker Toffee?
Make a big rectangle using 24-28 saltine crackers on a cookie sheet or tray. I usually lay parchment paper underneath it because it’s a pain in the rear to get the toffee off a cookie sheet.
To make it go a little further, I like to use 28, so it makes a bit more cracker toffee.
Next, you’ll want to melt the stick of butter in the microwave in a microwave-safe dish. You can do it in the big bowl you’re going to heat the sugar mixture in, then just add the sugar and salt to it.
DO NOT MIX IT UP. Just dump the sugar and the salt right into the butter, and do not stir or anything. Just pop it right in the microwave.
Cook the mixture for 7-8 minutes, until it reaches a golden brown color. Make sure to watch it when it’s close to the 7 minute mark. If you have a lower powered microwave, you might need additional minutes. Just microwave 30 seconds at a time and check it, so you don’t burn the toffee mixture.
I don’t recommend you cook this in a Pyrex glass pitcher. I broke my glass pitcher because I poured out the toffee onto the crackers, and then, I thought I would be smart and fill it with water. Well…the water cooled it too fast, and the glass shattered in my sink — which was totally fun, since we had to dig the shards of glass out of the garbage disposal.
Once it’s ready, carefully pour the toffee mixture over all the saltines.
Quickly, sprinkle the chocolate chips over the top of the toffee. Allow it to sit for 2 minutes. Then, use the spatula to spread the melted chocolate over all the crackers.
Allow the cracker toffee to cool and harden on the counter for an hour, or if you can’t wait for it (like me), pop the cookie sheet into the freezer for 15-20 minutes to harden the chocolate quicker.
Once the chocolate is hard, just break into pieces. Eat immediately!
How do you store Microwave Chocolate Cracker Toffee?
If you have leftovers, store in a ziplock bag or sealed container on the counter for up to a week.
