Sweet Potato in the Microwave

My college age kid is headed back to the dorm in a few days.  We’ve been planning easy things she can make in her tiny microwave when the dining hall is closed, and one of those things is a big ol’ Baked Sweet Potato in the Microwave.  

Make a Sweet Potato in the Microwave

She just loves sweet potatoes.  You can bake one right in the microwave and add some butter, brown sugar, cinnamon and a dash of salt for a delicious treat.

How to Bake a Sweet Potato in the Microwave

First, wash the sweet potato.  If you have wax paper, I like to wrap it because I think it helps, but it’s totally optional.  

If you have the “potato” option on your microwave, choose that one.  If not, usually microwave a sweet potato for about 5 minutes and then check it. If it’s not soft to the touch, then give it another minute and check again. 

When it’s soft, slice it open and add your toppings.  Our favorites are butter, brown sugar, cinnamon, and a dash of salt. It’s perfect if you have a bit of a sweet tooth.

Plus, there’s so many other ways you can make a baked sweet potato:

  • butter, salt and pepper
  • sour cream, salt, and pepper
  • a can of chili with sour cream or ranch dressing
  • marshmallows, brown sugar and cinnamon 
  • got any leftovers? shredded pork, beef, or chicken are delish, too!

Sweet Potatoes are good for you!

Sweet potatoes are a great starchy veggie filled with vitamins and minerals.  They are high in fiber, vitamin C, potassium, B5, niacin, B6, magnesium, and copper.  They get their orange color from beta carotene, which is an antioxidant.  They even have a fair amount of protein, too. 

Even though sweet potatoes are sweeter than regular potatoes, they actually have a lower glycemic index.  This means they are slower to digest, which helps you feel fuller and less likely to spike your blood sugar, which can make you tired. 

Sweet potatoes are also a good source of Vitamin A.  One sweet potato can give you more than double the daily value of Vitamin A.

Sweet Potato in the Microwave

Prep Time: 1 minute
Cook Time: 5 minutes
Total Time: 6 minutes

Make a Sweet Potato in the microwave in about 5 minutes with dinner made!

Ingredients

  • 1 Sweet Potato
  • 1 pat of butter
  • 1 teaspoon of brown sugar
  • 1/4 teaspoon cinnamon
  • dash of salt

Instructions

  1. Wash the sweet potato
  2. Wrap the sweet potato in wax paper (optional).
  3. Microwave the sweet potato for 5 minutes.
  4. Add additional minutes if not soft.
  5. Once the sweet potato is soft, slice it open and fluff.
  6. Add butter, brown sugar, cinnamon, and salt.
  7. Enjoy immediately!
