Microwave Peanut Brittle

Peanut Brittle is a wonderful gift to give and receive. I just love handmade gifts, especially if they’re food! And, this Microwave Peanut Brittle is so easy to make, since you don’t need to slave over a hot stove. This post contains affliate links.

I would recommend having a cookie sheet or a plastic tray with an edge to make this. You could use parchment paper by itself when you pour out the hot peanut brittle, but it’s easier to contain in a cookie sheet or tray.

How do you make Microwave Peanut Brittle?

The nice thing about making peanut brittle or pralines in the microwave is you don’t have to worry about a candy thermometer.

Mix up the sugar and corn syrup in a microwave-safe bowl. Then, heat for 4 minutes in the microwave. Use pot holders or a towel because the bowl will be very hot!

Stir in the peanuts and heat it for an additional 3 minutes.

Next add vanilla, butter, and baking soda and heat for 1 more minute.

For the easiest method, pour out onto an ungreased cookie sheet. If you don’t have one, I recommend parchment paper on a tray. Wax paper will really get stuck to the molten sugar mixture, so I don’t like to use it.

Allow the microwave peanut brittle to harden before breaking into pieces. If you have a big enough fridge, you can speed this along by popping it in the fridge. But, it will harden pretty quickly.

How do you break up Peanut Brittle?

Make sure you wait until it’s completely hardened. You can use a knife and as you attempt to slice it, and it will break into pieces.

Sometimes I hit it with the handle end of either a knife or a spatula, almost like a hammer, and it will break apart. That part is very satisfying!

Ingredients

  • 1 cup sugar
  • 1/2 corn syrup
  • 1 1/2 cups oil-roasted, salted peanuts
  • 1 teaspoon butter
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda

Instructions

  1. Combine the sugar and corn syrup and heat for 4 minutes in the microwave.
  2. Remove and stir in the peanuts. Heat for an additional 3 minutes.
  3. Lastly, add the vanilla, butter, and baking soda and heat for 1 more minute.
  4. Pour out onto an ungreased cookie sheet.
  5. Allow it to harden before breaking into pieces.
