Make Blueberry Bread in the Microwave

You might not believe this, but you can make a batch of quick bread in the microwave like Banana Bread or Blueberry Bread. You can make them as muffins, too! This post contains affiliate links.

The easiest way is to make them from a box mix like Jiffy. They have all kinds of muffin mixes like banana, raspberry, and even corn muffins.

Now they won’t brown like they usually do in the oven, but they will cook just fine and taste delicious straight from the microwave.

How to bake in the microwave?

You can’t use a metal pan like you do in the oven because metal sparks and can catch fire in the microwave. But, you can use silicone or glass. I have a glass loaf pan that I use to cook all kinds of things in the microwave from quick breads like this Blueberry Bread to other things like lasagna and meatloaf.

If you’re going to use silicone, there are all kinds of silicone pans that work in the microwave including loaf pans and muffin pans. I have yet to find a silicone muffin pan that is small enough so that it can rotate in the microwave. I like to use a set of silicone cupcake liners because six fits quite nicely on a microwave turn table. This way they cook evenly.

How do you make blueberry bread in the microwave?

You will use this same method whether you’re making the muffin mix in a loaf pan or in a muffin pan.

Add the ingredients and mix it up just like the box says. Whether using a loaf pan or the muffin liners, make sure to spray them with non-stick spray so you can easily remove the bread.

Then, we will cook it for just a few minutes. When the top looks done, and the sides are pulling away, you’ll know it’s ready.

Blueberry Bread
Yield: 1 loaf or about 6 muffins

Blueberry Bread

Prep Time: 2 minutes
Cook Time: 5 minutes
Total Time: 7 minutes

Ingredients

  • 1 package of blueberry muffin mix (or raspberry muffin mix)
  • 1 egg
  • 1/4 cup milk

Instructions

  1. Spray loaf pan or muffin pans with nonstick spray
  2. Combine the mix, egg, and milk.
  3. Fill muffin pans only 1/3 full. If making a loaf, a regular-sized loaf pan will only fill about 1/3 full.
  4. Microwave 6 muffins or 1 loaf for 3 minutes. Microwave 4 muffins for 2 minutes. Microwave 2 muffins for 1 1/2 minutes.
  5. Serve immediately.

Notes

You can use this same method for any Jiffy muffin mixes from apple cinnamon to raspberry to banana muffins.
