Quick Microwave Beef Fajita Bowl

This Microwave Beef Fajita Bowl recipe works great for both leftovers from a Mexican restaurant or freshly made food. Either way, it’s delicious! Usually, I wait to make one when I have leftover rice from either taco night at home or Mexican takeout.

How to make a Quick Microwave Beef Fajita Bowl

I love beef fajitas over chicken, so I usually keep a package of frozen precooked beef fajita meat or grilled and ready beef strips, so I can make a fajita bowl in a snap.

I’ve used Tyson Grilled and Ready Beef Strips, John Soules Beef Fajita meat, as well as some store brands.  I know H-E-B’s store brand of precooked fajita meat is pretty good.  You just want to look for “pre-cooked” so you don’t need to worry about cooking it.  You’re just warming it up. 

I also keep a bag of frozen peppers and onions just so I can make fajitas in a flash.  You can usually buy the store brand  pretty cheap.  The best part is finding one that says “steam in the bag,” so you can just throw it in the microwave and cook it.  When it’s ready, I just open the bag and toss it into the fajita meat so it can absorb the flavor and spices.  Be careful when you do that because that bag of veggies can be HOT!

Then, I like to use leftovers from a takeout meal like salsa, guacamole, and rice.  Or, more often than not, I have little packages of Wholly Guacamole or an avocado in the fridge, and there’s always salsa.  Chips and salsa or guacamole are snack staples around here, so I usually have them readily available. 

Ingredients to make a Microwave Beef Fajita Bowl

One of the things I love getting on my burrito or fajita bowl at restaurants is dried roasted garlic.  It adds such good flavor that I went and bought my own bottle at the store.  It would be a great addition to your beef fajita bowl.

Microwave Beef Fajita Bowl
Yield: 1 bowl

Microwave Beef Fajita Bowl

Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Ingredients

  • 1 cup rice (Mexican, Taco, or white rice)
  • 5 oz precooked beef fajita meat
  • 4 oz peppers and onions
  • 2 tablespoons guacamole or 3-4 slices of fresh avocado
  • 1 tablespoon salsa
  • 1/4 cup cheese (optional)

Instructions

  1. Cook frozen peppers and onions according to package (usually about 6 minutes for a steam in the bag package)
  2. Cook rice according to package (such as Minute Ready Rice). If using left over takeout rice, I recommend about 1 minute or so, until hot.
  3. Cook beef steak strips / fajita meat according to package.
  4. Layer the bowl with rice, peppers and onions, and meat.
  5. If available, add cheese, salsa, and guacamole (or avocado slices).
  6. If available and desired add roasted garlic.
