Microwave Migas in a Mug

Some of my favorite things to eat for breakfast are made in the microwave like these easy Scrambled Eggs.  It’s quick, easy, and I don’t have to get a bunch of things dirty making it.  I’ve got a twist on that egg recipe if you like a little kick.  It’s Microwave Migas! You can make it in a mug or a bowl in less than a couple of minutes.

We live in Texas, which is home to TexMex, so someone is always adding some having some salsa with your eggs, or throw them in a tortilla is perfectly acceptable.

What is migas? 

Migas actually comes from Spain. It’s a traditional breakfast of eggs that incorporates leftover bread.  The Mexican version uses leftover corn tortillas that are fried in oil with the eggs and cheese. Usually this is all made in a skillet, but I’ve devised a way to make it in the microwave!

The TexMex version takes it a step further and adds veggies such as onions, tomatoes, salsa, and it seems to focus more on using the bottom of the bag corn tortilla chips, which I think is an awesome way to use up those last bits of tortilla chips.  I often put them in Mexican casseroles, but this is my second favorite way to use them up. 

How do you make migas in the microwave? 

The ingredients you need to make migas in the microwave.

This is a simple dish that you really can’t mess up.  You simple just beat the eggs and mix everything else up in them.  The perfect time to make migas is the morning after you’ve had Mexican food takeout the previous night.  I use the leftover salsa and tortilla chips and combine those with eggs, milk, and cheese, and I make sure to crush the tortilla chips by hand. You don’t want any large pieces before adding to the egg mixture. 

If you have leftover tortillas (flour or corn), you can transfer your Migas to a couple of tortillas for an easy handheld meal. This particular Microwave Migas recipe will make enough to fill two fajita-sized flour tortillas.

Microwave Migas in a Mug

Cook Time: 1 minute
Total Time: 2 minutes

Ingredients

  • 2 eggs
  • 1 tablespoon salsa
  • 1 tablespoon milk
  • a big pinch of shredded cheese
  • 1/4 cup crushed corn tortilla chips
  • Optional: guacamole
  • Optional: 2 tortillas
  • Optional: extra salsa

Instructions

  1. Beat two eggs in a 12 oz mug.
  2. Add milk and cheese and stir.
  3. Add salsa and crushed tortilla chips.
  4. Cook in the microwave for 1 1/2 minutes.
  5. Optional: Heat two flour tortillas in the microwave for 20-30 seconds. Separate the migas into both tortillas. Add guacamole and salsa if desired and roll up.
  6. Serve immediately.

Notes

You can eat this straight from the mug or put it in tortillas and wrap it up.
