Easy Enchilada Bowl in the Microwave

Living in Texas, TexMex food is a must have.  I often judge a new Mexican restaurant on how good the enchiladas are. One of my favorite things is cheese enchiladas topped in chili con carne. I recreated my own quick and easy microwaveable version in this super delicious Easy Enchilada Bowl.

This is a definite quick fix.  You can make it, cook it, and plop down in front of Netflix eating in less than five minutes. 

It hits the spot when you’ve got a craving for some TexMex.  It also hits the spot in the colder months when you just want something hearty and filling.

Make an Easy Enchilada Bowl

This enchilada bowl is very similar to making a lasagna — it’s got meat sauce, cheese, and instead of noodles you’ve got corn tortillas.  I would not recommend using flour tortillas.  I’ve seen people who aren’t really familiar wit TexMex food use flour tortillas for enchiladas, but it’s not good.  They turn into a big slimy mess.  Corn tortillas hold up much better when making enchiladas.

I like to start out with a layer of chili.  You could also start out with a thin layer of salsa.  It’s just a layer to start with so the tortilla does not stick to the bottom of the bowl.  

Then, you’ll just layer ingredients – tortilla, chili, cheese, and salsa.  You can turn this into more of a Mexican Lasagna if you have extra ingredients.  Maybe you have fajita meat, black beans, or rice, those layers work well, too.

Microwaves can really vary your cooking time.  My microwave is 1500 watts, and I started out with one minute.  Then, I stuck my finger in the center of the food to see if it was warm.  It ended up being a little cold, so I ran it for an additional minutes, and it was perfect.  The cheese was melted, and the inside was hot.  

Lastly, I put a dollop of sour cream and a few chives.  I keep a spice jar of freeze dried chives, which my teenager loves.  Guacamole would be a great topping, too!  But, you don’t need to top it with anything as it tastes great without any toppings, too. 

This has become my husband’s favorite quick meal at home.  When he taste tested this recipe, he was hooked, and now eats it on the weekends when he has to fix himself a meal.

Easy Enchilada Bowl in the Microwave

Prep Time: 2 minutes
Cook Time: 2 minutes
Total Time: 4 minutes

Easily make a Enchilada Bowl in the Microwave reminiscent of your favorite cheese enchiladas topped with chili con carne.

Ingredients

  • 3 corn tortillas
  • 1 10.5 oz can of chili with no beans
  • 1/2 cup shredded cheddar
  • salsa

Instructions

  1. Layer a spoonful of chili on the bottom of the bowl.
  2. Add a tortilla on top of the chili.
  3. Cover the tortilla in a layer of chili.
  4. Top the chili in shredded cheese
  5. Add a couple spoonfuls of salsa.
  6. Layer tortilla, chili, cheese, and salsa again.
  7. Layer tortilla, chili, and cheese one last time.
  8. Heat in the microwave for 1 1/2 t 2 minutes. If your microwave does not have a turntable, rotate the bowl every 30 seconds.
  9. Top with additional salsa, sour cream, and chives, if desired.
  10. Enjoy immediately.
